1 cup cashew or Brazil nuts
5 pcs fresh dates
1 cup coconut flakes
1/2 cup light mulberry and raisins
3 tbsp coconut oil
The juice + grated rind of one lemon
1/2 teaspoon pure vanilla powder
a pinch of sea salt
Add the nuts in a food processor and blend until they become a nut flour. Mix in the other ingredients in the food processor and run in full until all mixed into a dough. Set the bowl in the fridge for an hour to harden. Shape the mixture into balls using two teaspoons, roll them into smooth balls and place in a bowl with coconut flakes. Roll them around so they become covered with coconut flakes. Store in refrigerator or freezer. Keeps for about a week in the fridge.
