MICRO-GREENS! I’m not sure if it’s because Spring is just around the corner, or because each day brings more sunlight, but lately I just cannot get enough micro-greens. Last week I was having guests over and I decided to create some fancy side salads using micro-greens. Both of these salads are loaded with tasty superfoods, easy to build, and will certainly wow your guests!
To make the salad on the left, I used individual serving dishes. I started by making beds of shaved rainbow carrots, and topped them with a smidge of micro-greens. I then sprinkled black and white sesame seeds and pumpkin seeds on top of the salad. Three easy steps!
For the salad on the right, I started by placing a huge portion of micro-greens on my serving dish. I topped the greens with hemp seeds and goji berries and garnished with edible flowers. Again, three easy steps!
Top with the best creamy green dressing
I served the salads with a dressing that is so easy and tastes absolutely fantastic. Simply blend together:
Leaves from 1 bunch Italian parsley
3 T apple cider vinegar
1/4 cup cold pressed raw oil of your choice (I used grapeseed)
1/4 – 1/2 cup of water or more to make a consistency you like
1 T sweetener of your choice
1/2 t sea salt
1/4 t fresh ground pepper
And that’s it—beautiful healthy salads that are quick and easy to make, leaving you plenty of time to enjoy your guests!
